Breakfast Skillet Hash

Breakfast doesn't have to be in the morning! Our family loves having breakfast for dinner every once in a while. There are so many different combinations you can make when it comes to breakfast foods, adding a nice change to the ordinary dinner idea.

Variety is very important when it comes to making home cooked meals. Having the same thing over and over again will become very boring in no time at all. Trying new recipes, once or twice a week is a great way to keep your dinner ideas fresh.

If you have children it's also improtant to introduce them to a variety of foods, some say this lessens the chance of having a picky eater. Breakfast foods are usually a winner amongst kids.

Ingredients:

1# of any breakfast sausage (I prefer to use Jimmy Dean)
3 cups of diced potatoes or cooked rice
1 small bell pepper
1 small onion diced small
8 large eggs
1/4 cup of milk
1 tsp. salt & pepper

Directions:

1. Slightly brown sausage in large skillet over medium heat

2. Mix in onions, peppers, and potatoes cook until potatoes are tender

3. Pour off excess grease

4. Scramble eggs, with milk and pour over meat mix

5. Cook until eggs are done

Home Cooked-Breakfast for Dinner

Home Style Omelet Bake

Ingredients

  • 1# Jimmy Dean sausage
  • 9 eggs
  • 1/2 cup of sour cream
  • 1/2 cup of milk
  • 1 tsp. salt and pepper
  • 2 tbsp. scallions chopped small
  • Pam cooking spray
  1. Scramble sausage over medium heat until browned, and drain.
  2. Pre-heat oven to 325 degrees; Spray 8x8x2 square casserole dish with Pam cooking spray.
  3. Beat eggs, milk, sour cream, salt, pepper; mix well, add onions and sausage; pour into baking dish.
  4. Bake for 30 minutes.
