One of my most favorite recipes growing up, from momma's home cookin was, Chicken ala King. It was great tasting and unusual. As I grew up I liked it for different reasons, like the fact that it is great for using up left overs, or the fact that you can have an awesome dinner in less than 20 minutes . You may replace the chicken with turkey, for a little different taste.
Chicken ala King
INGREDIENTS
- 1/2cup of margarine or butter
- 1small bell pepper diced fine
- 1 cup of sliced can mushrooms, drained (optional)
- 1/2 cup of all purpose flour
- 1/2 tsp. of salt and pepper
- 1 1/2 cups of milk
- 1 1/4 cups chicken broth
- 2 1/2 cups of cut up chicken
- 1 2 oz. jar of chopped pimientos, drained
- 1 can of LeSuer brand sweet baby peas
- rice or toast
2. Stir in flour, salt, and pepper. Cook over medium heat, stir constantly, until bubbly; remove from heat
3. Stir in milk and broth. Bring to boil over medium heat, stirring constantly. Boil and stir for 1 minute.
4. Stir in pimientos, chicken, and peas. Cook until heated. Serve over rice or toast.
